At Home Pumpkin Spice Latte

So here I am laying in bed one morning, trying to wake up. But I’m actually still half asleep, not completely asleep though. When all of the sudden, I come up with this random ass thought in my head – “I should make an at home Pumpkin Spice Latte.” You know, the famous PSL’s from Starbucks but better because way less sugar, real ingredients, & you don’t have to pay $5 per drink.

What do I do when I’m done with my morning routine? Well, I make my at-home PSL. I literally don’t even know what I’m going to put together so I just start with the three main ingredients:

Almond Milk, Pumpkin, & Coffee

While brewing the coffee, I add about 1 cup of almond milk & about 1/2 cup of pumpkin to a saucepan and stir on low heat. 

Let me add in a disclaimer: I have made this so many times & haven’t measured one thing, ever. So I’m GUESStimating all of these measurements. I don’t have time to measure every little thing I make at home, you know? It’s just not the way I roll.

Okay, so where were we.

If you want a strong pumpkin flavor, add in more pumpkin. If you want strong coffee, do less almond milk. This recipe can be altered just the way you like it.

Next, add your desired spices. I do a few dashes of cinnamon & pumpkin pie spice. You could do ginger, cloves, nutmeg, allspice, you name it. Then, I do like 1/4 tsp of vanilla & 1/2 tbsp of maple syrup. Maple syrup is for sweetness, so if you want it really sweet, then do more or add coconut sugar.

Finally, add in your desired amount of brewed coffee to the saucepan and stir for a few more minutes. Pour into your adorable pumpkin mug and you’re set! Sometimes I do include a dash of dairy-free vanilla creamer. 

I swear to you, I came up with this recipe while laying in bed trying to wake up. Sure, you can find similar ones on Pinterest, but I just feel like mine gets to the point. It’s efficient. If you want this to last all week, then just triple your ingredients, it’s that simple.

Now I’m really wishing I had a PSL in my hand, rather than my water. Oh well, you gotta stay hydrated!
