Cookies that will rock your world and I MEAN IT. Like these cookies were a serious favorite at my Christmas Eve. And I’m going up against some pretty serious bakers who have been baking and cooking for a lot longer than I have.
Sure, it’s no longer Christmas but it’s still winter. Which means these cookies can still be made because they’re perfect to have during these icy cold months with a cup of, you guessed it, hot cocoa.
I didn’t come up with this recipe by myself, I found the recipe off of Pinterest from this website! I do need to bring up that these cookies will turn out best if you follow the instructions, every step of the way.
Cookies
1 stick of unsalted butter
12 oz of chocolate chips
1 1/2 cups of flour
1/4 cup of cocoa powder
1 1/2 tsp of baking powder
1/4 tsp of salt
1 1/4 cups of brown sugar
3 eggs
1 1/2 tsp of vanilla extract
Icing
2 cups of powdered sugar
1/2 stick of unsalted butter that needs to be melted
1/4 cup of cocoa powder
1/4 cup of hot water
1/2 tsp of vanilla extract
Sprinkles to decorate & large Marshmallows
Melt the 1 stick of butter and chocolate chips in a medium saucepan. Once melted, set aside to cool for a little bit.
Then whisk the flour, cocoa powder, baking powder, & salt together in a bowl.
Also mix the the sugar, eggs, & vanilla in a different bowl. Then add in the chocolate/butter mixture you melted in the saucepan & mix well. & slowly mix the dry ingredients into this bowl and mix well.
Next you will cover the dough and refrigerate it for an hour.
Then Preheat your oven to 325 & line the baking sheets with parchment paper. Then you’ll spoon about a tablespoon of dough into your hands to create ball shaped cookies. Put each cookie on the cookie sheet and flatten a bit. You’ll bake the cookies for 12 minutes.
As the cookies are baking, cut the marshmallows in half from side to side, not up and down. After the 12 minutes is up, take the cookies out & place the half cut marshmallows on each cookie, & bake the cookies for 2 more minutes. You’ll want the cookies to cool before placing them on the cooling racks. But place a pan under the cooling racks to prevent from getting icing everywhere after you’ve placed the cookies on the cooling racks.
Now for the icing, you will mix all of the ingredients together & spoon the icing onto each cookie and then add the sprinkles.
