Happy Sunday, everyone- my favorite day of the week, I might add. I made these banana muffins a few weekends ago and they were so good and such a hit. Of course, I felt like I needed to share because these are the perfect treat to make on a Sunday afternoon, and then you also have them for the week to enjoy.
On that note, I hope you’ve had an eventful weekend full of belly laughs, good food, and fun conversations!
I found this muffin recipe through Pinterest on skinnyhealthyfood.com.
+ 2 overripe bananas
+ 1/4 cup of coconut sugar
+ 1/4 cup of peanut butter
+ 1/2 cup of wheat flour
+ 1 tsp of baking powder
+ 1/2 tsp of baking soda
+ Preheat the oven to 355 + Mash the bananas with a fork + Mix the bananas with coconut sugar & peanut butter + Add in the dry ingredients and mix + Bake for 18 minutes
& voila, you have the simplest, yet delicious vegan banana muffins!
A muffin that isn’t filled with unnecessary sugar, oils, & fats is the perfect kind of muffin that you can enjoy without feeling guilty about it. They’re also the perfect snack to have with your coffee and they aren’t messy, so you could definitely eat it in your car on the way to work or school, lol! I’m always late and feel like I’m eating in my car on a regular occasion, can anyone relate??
